Ingredients

  • 2 cups uncooked white rice
  • 0.25 teaspoon black pepper
  • 1 large onion
  • 2 stalks celery
  • 2 lbs chicken breast or thighs
  • 1 teaspoon thyme
  • 2 carrots
  • 3 cloves garlic
  • 4 cups chicken broth
  • 0.5 teaspoon salt

Instructions

  1. Step 1: In a large pot or Dutch oven, sauté the diced onion, minced garlic, sliced carrots, and sliced celery in a little bit of oil until the vegetables are tender
  2. Step 2: Add the chicken to the pot and cook until browned on all sides
  3. Step 3: Add the chicken broth, thyme, salt, and pepper to the pot, stirring to combine
  4. Step 4: Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes
  5. Step 5: Add the uncooked rice to the pot and continue to simmer for another 20-25 minutes, or until the rice is tender and the liquid has been absorbed
