Description
A hearty and comforting soup made with chicken, rice, and vegetables
Ingredients
- 2 cups uncooked white rice
- 0.25 teaspoon black pepper
- 1 large onion
- 2 stalks celery
- 2 lbs chicken breast or thighs
- 1 teaspoon thyme
- 2 carrots
- 3 cloves garlic
- 4 cups chicken broth
- 0.5 teaspoon salt
Instructions
- Step 1: In a large pot or Dutch oven, sauté the diced onion, minced garlic, sliced carrots, and sliced celery in a little bit of oil until the vegetables are tender
- Step 2: Add the chicken to the pot and cook until browned on all sides
- Step 3: Add the chicken broth, thyme, salt, and pepper to the pot, stirring to combine
- Step 4: Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes
- Step 5: Add the uncooked rice to the pot and continue to simmer for another 20-25 minutes, or until the rice is tender and the liquid has been absorbed
- Step 6: Serve hot and enjoy!
