Description
Classic Italian dish made with chicken, onions, bell peppers, and mushrooms in a rich tomato sauce
Ingredients
- 1 2 tablespoons olive oil
- 1 1 large onion chopped 2 cups
- 1 1 28 oz can crushed tomatoes
- 1 1 teaspoon dried oregano
- 1 1 teaspoon dried basil
- 1 1 12 pounds boneless skinless chicken breast or thighs cut into 1inch pieces
- 1 salt and pepper to taste
- 1 4 garlic cloves minced
- 1 8 oz mushrooms button or cremini sliced
- 1 2 large bell peppers any color chopped 2 cups
Instructions
- Step 1: Heat the olive oil in a large skillet over medium-high heat.
- Step 2: Add the chicken and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
- Step 3: Add the onion and bell peppers to the skillet and cook until they start to soften, about 5 minutes.
- Step 4: Add the mushrooms and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
- Step 5: Add the crushed tomatoes, oregano, basil, salt, and pepper to the skillet. Stir to combine.
- Step 6: Return the chicken to the skillet and simmer, uncovered, until the sauce has thickened and the chicken is cooked through, about 15-20 minutes.
- Step 7: Serve hot, garnished with chopped fresh parsley or basil, if desired.
