Description
A fusion of fajita flavors and quesadilla goodness, with chicken, bell peppers, onions, and cheese inside a crispy tortilla
Ingredients
- 1 large onion
- Salt and pepper
- 0.5 cup lime juice
- 0.25 teaspoon paprika
- 2 cloves garlic
- 0.5 pounds chicken breasts
- 0.25 teaspoon cayenne pepper
- 0.25 cup cilantro
- 2 tablespoons vegetable oil
- 2 large bell peppers
- 0.25 teaspoon cumin
- 8 small flour tortillas
- 1 teaspoon oregano
- 2 cups shredded cheese
Instructions
- Step 1: In a large bowl, whisk together lime juice, garlic, oregano, cumin, paprika, and cayenne pepper. Add chicken and marinate for at least 30 minutes.
- Step 2: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Remove chicken from marinade and cook until browned and cooked through, about 5-6 minutes. Transfer to a plate and cover with foil to keep warm.
- Step 3: In the same skillet, add the remaining 1 tablespoon of oil. Add onion and bell peppers and cook, stirring occasionally, until they start to soften, about 5 minutes.
- Step 4: Add cooked chicken back into the skillet and stir to combine with onion and bell peppers. Season with salt and pepper to taste.
- Step 5: In a large skillet or griddle, warm tortillas over medium heat for about 30 seconds on each side.
- Step 6: To assemble quesadillas, lay a tortilla flat and sprinkle shredded cheese on half of the tortilla. Spoon about 1/2 cup of the chicken and vegetable mixture on top of the cheese.
- Step 7: Fold tortilla in half to enclose filling. Cook for 2-3 minutes or until tortilla is crispy and cheese is melted. Flip and cook for an additional 2-3 minutes or until the other side is also crispy and cheese is melted.
- Step 8: Repeat with remaining tortillas and filling. Cut into wedges and serve hot, garnished with chopped cilantro.
