Description
Sizzling chicken and bell peppers served with warm flour tortillas
Ingredients
- 8 small flour tortillas
- 0.25 cup lime juice
- 0.25 teaspoon black pepper
- 2 large bell peppers
- 0.5 teaspoon salt
- 0.25 teaspoon cumin
- 2 tablespoons vegetable oil
- 1 pound chicken breasts
- 1 teaspoon oregano
- 2 cloves garlic
- 1 large onion
Instructions
- Step 1: In a large resealable plastic bag, combine lime juice, garlic, oregano, and cumin. Add the chicken, seal, and refrigerate for 30 minutes.
- Step 2: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off. Cook the chicken for 5-6 minutes or until cooked through. Transfer to a plate and cover with foil to keep warm.
- Step 3: In the same skillet, add the remaining 1 tablespoon of oil. Add the sliced onion and cook for 3-4 minutes or until slightly softened.
- Step 4: Add the sliced bell peppers to the skillet and cook for an additional 4-5 minutes or until the vegetables are tender.
- Step 5: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble the fajitas by placing a portion of the chicken and vegetables onto each tortilla and serving immediately.
