Description

A savory and aromatic Chinese-inspired dish made with chicken, rice, and vegetables

Ingredients

  • 1 tsp oyster sauce
  • 2 cloves garlic
  • 2 eggs
  • 2 tbsp vegetable oil
  • 2 tsp soy sauce
  • 1 lb chicken breast
  • 2 cups rice
  • 1 cup mixed vegetables
  • 1 small onion
  • Salt and pepper

Instructions

  1. Step 1: Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat
  2. Step 2: Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes
  3. Step 3: Remove the chicken from the skillet and set aside
  4. Step 4: In the same skillet, add the remaining 1 tbsp of vegetable oil
  5. Step 5: Add the diced onion and minced garlic to the skillet and cook until the onion is translucent
  6. Step 6: Add the mixed vegetables to the skillet and cook for 2-3 minutes
  7. Step 7: Push the vegetables to one side of the skillet
  8. Step 8: Add a little more oil to the other side of the skillet if necessary, then pour in the beaten eggs
  9. Step 9: Scramble the eggs until they are cooked through, breaking them up into small pieces as they cook
  10. Step 10: Mix the eggs with the vegetables
  11. Step 11: Add the cooked rice to the skillet, breaking up any clumps with a spatula
  12. Step 12: Stir-fry the rice with the vegetables and eggs for about 5 minutes, until everything is well combined and heated through
  13. Step 13: Add the cooked chicken back into the skillet and stir-fry for another minute
  14. Step 14: Add the soy sauce to the skillet and stir-fry for a final minute
