Description
A savory and aromatic Chinese-inspired dish made with chicken, rice, and vegetables
Ingredients
- 1 tsp oyster sauce
- 2 cloves garlic
- 2 eggs
- 2 tbsp vegetable oil
- 2 tsp soy sauce
- 1 lb chicken breast
- 2 cups rice
- 1 cup mixed vegetables
- 1 small onion
- Salt and pepper
Instructions
- Step 1: Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat
- Step 2: Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes
- Step 3: Remove the chicken from the skillet and set aside
- Step 4: In the same skillet, add the remaining 1 tbsp of vegetable oil
- Step 5: Add the diced onion and minced garlic to the skillet and cook until the onion is translucent
- Step 6: Add the mixed vegetables to the skillet and cook for 2-3 minutes
- Step 7: Push the vegetables to one side of the skillet
- Step 8: Add a little more oil to the other side of the skillet if necessary, then pour in the beaten eggs
- Step 9: Scramble the eggs until they are cooked through, breaking them up into small pieces as they cook
- Step 10: Mix the eggs with the vegetables
- Step 11: Add the cooked rice to the skillet, breaking up any clumps with a spatula
- Step 12: Stir-fry the rice with the vegetables and eggs for about 5 minutes, until everything is well combined and heated through
- Step 13: Add the cooked chicken back into the skillet and stir-fry for another minute
- Step 14: Add the soy sauce to the skillet and stir-fry for a final minute
