Description
A spicy Indian-inspired stir-fry dish made with marinated chicken, bell peppers, and onions
Ingredients
- 2 medium bell peppers
- 1 teaspoon turmeric powder
- 2 medium onions
- 0.25 teaspoon black pepper
- 1 teaspoon coriander
- 2 tablespoons chicken broth
- 2 tablespoons tomato puree
- 0.5 teaspoon red chili powder
- 2 teaspoons cumin
- 1 medium tomato
- 2 teaspoons ghee
- 0.5 teaspoon salt
- 500 g chicken breast
- 3 cloves garlic
- 0.5 teaspoon garam masala powder
Instructions
- Step 1: Heat oil in a large skillet or wok over medium-high heat
- Step 2: Add cumin, coriander, turmeric, chili powder, garam masala, salt, and pepper. Cook for 1 minute, stirring constantly
- Step 3: Add the sliced onions and cook until they start to brown (about 5 minutes)
- Step 4: Add the sliced bell peppers and cook for an additional 2-3 minutes
- Step 5: Add the marinated chicken and cook until browned and cooked through (about 6-8 minutes)
- Step 6: Add the minced garlic, diced tomato, tomato puree, and chicken broth. Stir well to combine
- Step 7: Reduce heat to medium-low and simmer for 5 minutes, stirring occasionally
- Step 8: Serve hot, garnished with fresh cilantro or scallions (if desired)
