Description
A refreshing and protein-packed sandwich filled with chicken salad made with grilled chicken, celery, and herbs, served on whole wheat bread
Ingredients
- 4 slices whole wheat bread
- 0.25 cup mayonnaise
- 0.25 cup red onion
- Salt and pepper
- Lettuce
- 1 pound chicken breast
- 0.5 cup celery
- 1 tablespoon dill
- 2 tablespoons Dijon mustard
Instructions
- Step 1: Preheat grill to medium-high heat. Season the chicken breast with salt and pepper. Grill the chicken for 5-6 minutes per side, or until cooked through. Let it rest for 5 minutes before slicing into thin strips.
- Step 2: In a large bowl, combine the sliced chicken, diced celery, thinly sliced red onion, mayonnaise, Dijon mustard, salt, and pepper. Mix well until all the ingredients are fully incorporated.
- Step 3: Stir in the chopped fresh dill.
- Step 4: Lay the slices of whole wheat bread on a clean surface. Spoon the chicken salad onto two slices of bread.
- Step 5: Top with lettuce leaves and place the remaining slices of bread on top to create a sandwich.
