Chicken Tortilla Soup

Description

A flavorful and spicy soup made with shredded chicken, tortillas, and vegetables

Ingredients

  • 0.5 cup bell pepper
  • 2 cloves garlic
  • 0.5 cup onion
  • 8 tortillas corn
  • 0.25 cup cilantro
  • 1 lb chicken breasts
  • Salt and pepper
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 0.5 tsp cayenne pepper
  • 4 cups chicken broth
  • 1 tsp smoked paprika

Instructions

  1. Step 1: In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook until softened, about 5 minutes
  2. Step 2: Add the diced bell pepper and cook for an additional 2-3 minutes
  3. Step 3: Add the garlic, cumin, smoked paprika, and cayenne pepper. Cook for 1 minute, stirring constantly
  4. Step 4: Add the chicken to the pot and cook until browned, about 5-6 minutes
  5. Step 5: Add the chicken broth, diced tomatoes, and browned chicken to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes
  6. Step 6: While the soup is simmering, fry the tortilla strips in hot oil until crispy and golden. Drain on paper towels
  7. Step 7: Once the soup has finished simmering, use two forks to shred the chicken into bite-sized pieces
  8. Step 8: Add the shredded chicken back to the pot, along with the fried tortilla strips and chopped cilantro. Season with salt and pepper to taste
  9. Step 9: Serve hot and enjoy!
