Description
A flavorful and spicy soup made with shredded chicken, tortillas, and vegetables
Ingredients
- 0.5 cup bell pepper
- 2 cloves garlic
- 0.5 cup onion
- 8 tortillas corn
- 0.25 cup cilantro
- 1 lb chicken breasts
- Salt and pepper
- 1 can diced tomatoes
- 1 tsp cumin
- 0.5 tsp cayenne pepper
- 4 cups chicken broth
- 1 tsp smoked paprika
Instructions
- Step 1: In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook until softened, about 5 minutes
- Step 2: Add the diced bell pepper and cook for an additional 2-3 minutes
- Step 3: Add the garlic, cumin, smoked paprika, and cayenne pepper. Cook for 1 minute, stirring constantly
- Step 4: Add the chicken to the pot and cook until browned, about 5-6 minutes
- Step 5: Add the chicken broth, diced tomatoes, and browned chicken to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes
- Step 6: While the soup is simmering, fry the tortilla strips in hot oil until crispy and golden. Drain on paper towels
- Step 7: Once the soup has finished simmering, use two forks to shred the chicken into bite-sized pieces
- Step 8: Add the shredded chicken back to the pot, along with the fried tortilla strips and chopped cilantro. Season with salt and pepper to taste
- Step 9: Serve hot and enjoy!
