Description
A traditional Mexican breakfast dish made with fried tortillas, salsa, and cheese
Ingredients
- 1 small onion
- 0.25 cup vegetable oil
- 6 tortillas corn
- 1 cup salsa roja
- 1 cup queso fresco
- 1 pepper jalapeño
- 0.25 cup cilantro
- 2 cloves garlic
- Salt
Instructions
- Step 1: Heat the oil in a large skillet over medium-high heat.
- Step 2: Fry the tortilla quarters in batches until crispy and golden, about 2-3 minutes per batch.
- Step 3: Remove the fried tortillas from the oil and place them on a paper towel-lined plate to drain excess oil.
- Step 4: In the same skillet, cook the onion, garlic, and jalapeño until the onion is translucent, about 3-4 minutes.
- Step 5: Add the salsa roja to the skillet and stir to combine with the onion mixture.
- Step 6: Add the fried tortillas to the skillet and toss to coat with the salsa mixture.
- Step 7: Transfer the mixture to a serving dish and top with queso fresco and cilantro.
- Step 8: Season with salt to taste.
