Description

Ingredients

  • 1 small onion
  • 0.25 cup vegetable oil
  • 6 tortillas corn
  • 1 cup salsa roja
  • 1 cup queso fresco
  • 1 pepper jalapeño
  • 0.25 cup cilantro
  • 2 cloves garlic
  • Salt

Instructions

  1. Step 1: Heat the oil in a large skillet over medium-high heat.
  2. Step 2: Fry the tortilla quarters in batches until crispy and golden, about 2-3 minutes per batch.
  3. Step 3: Remove the fried tortillas from the oil and place them on a paper towel-lined plate to drain excess oil.
  4. Step 4: In the same skillet, cook the onion, garlic, and jalapeño until the onion is translucent, about 3-4 minutes.
  5. Step 5: Add the salsa roja to the skillet and stir to combine with the onion mixture.
  6. Step 6: Add the fried tortillas to the skillet and toss to coat with the salsa mixture.
  7. Step 7: Transfer the mixture to a serving dish and top with queso fresco and cilantro.
  8. Step 8: Season with salt to taste.
