Description
A flavorful Argentinean-inspired steak wrap with a tangy and herby chimichurri sauce
Ingredients
- 0.25 cup Parsley
- 0.25 cup Oregano
- 0.25 cup Olive Oil
- 4 large Flour Tortillas
- 2 cloves Garlic
- 1 tsp Salt
- 1 large Red Onion
- 4 oz Provolone Cheese
- 1 large Red Bell Pepper
- 1.5 lbs Flank Steak
- 0.5 cup Red Wine Vinegar
- 0.5 tsp Black Pepper
Instructions
- Step 1: In a food processor, combine parsley, oregano, garlic, red wine vinegar, salt, and black pepper. Process until well combined.
- Step 2: With the processor running, slowly pour in olive oil through the top. Process until the sauce is well combined and slightly emulsified.
- Step 3: Preheat grill to medium-high heat. Season the flank steak with salt and pepper. Grill the steak for 5-6 minutes per side, or until it reaches desired level of doneness. Let it rest for 5 minutes before slicing it thinly against the grain.
- Step 4: Grill the red bell pepper and red onion for 3-4 minutes per side, or until they have a nice char and are slightly tender.
- Step 5: Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble the wraps by spreading a spoonful of chimichurri sauce on each tortilla, followed by a few slices of steak, some grilled peppers and onions, and a slice of provolone cheese.
