Ingredients

  • 1 cup black beans

  • 1 cup Monterey Jack cheese
  • 2 tablespoons cilantro
  • 0.25 teaspoon black pepper
  • 2 cloves garlic
  • 1 chipotle pepper
  • 2 large flour tortillas
  • 1 teaspoon cumin

Instructions

  1. Step 1: Heat the olive oil in a large skillet over medium-high heat.
  2. Step 2: Add the diced onion and cook for 3-4 minutes, until translucent.
  3. Step 3: Add the diced red bell pepper and cook for an additional 2-3 minutes.
