Ingredients
- 0.5 teaspoon salt
- 0.5 cup red bell pepper
- 1 tablespoon olive oil
- 1 cup black beans
- 0.5 cup yellow onion
- 1 teaspoon smoked paprika
- 1 cup Monterey Jack cheese
- 2 tablespoons cilantro
- 0.25 teaspoon black pepper
- 2 cloves garlic
- 1 chipotle pepper
- 2 large flour tortillas
- 1 teaspoon cumin
Instructions
- Step 1: Heat the olive oil in a large skillet over medium-high heat.
- Step 2: Add the diced onion and cook for 3-4 minutes, until translucent.
- Step 3: Add the diced red bell pepper and cook for an additional 2-3 minutes.
- Step 4: Add the minced garlic and cook for 1 minute, until fragrant.
