Description
A flavorful and spicy burrito filled with chipotle chicken, rice, and beans
Ingredients
- 0.25 cup chipotle peppers
- 1 tablespoon olive oil
- 1 lb chicken breasts
- 1 teaspoon paprika
- Salt and pepper
- 2 cups chicken broth
- 1 can black beans
- 1 teaspoon cumin
- cheese
- 1 small onion
- 2 cloves garlic
- 8 large flour tortillas
- 1 cup white rice
Instructions
- Step 1: Cook the rice according to package instructions using chicken broth instead of water
- Step 2: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned, about 5-6 minutes
- Step 3: Add diced onion and minced garlic to the skillet and cook until onion is translucent
- Step 4: Add chipotle peppers, cumin, and paprika to the skillet and stir to combine
- Step 5: Add cooked chicken back to the skillet and stir to coat with chipotle mixture
- Step 6: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
- Step 7: Assemble burritos by spooning cooked rice, chipotle chicken, and black beans onto the tortilla and topping with cheese
- Step 8: Serve immediately and enjoy!
