Ingredients

  • 0.25 cup chipotle peppers
  • 1 tablespoon olive oil
  • 1 lb chicken breasts
  • 1 teaspoon paprika
  • Salt and pepper
  • 2 cups chicken broth
  • 1 can black beans
  • 1 teaspoon cumin

  • 2 cloves garlic
  • 8 large flour tortillas
  • 1 cup white rice

Instructions

  1. Step 1: Cook the rice according to package instructions using chicken broth instead of water
  2. Step 2: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned, about 5-6 minutes
  3. Step 3: Add diced onion and minced garlic to the skillet and cook until onion is translucent
