Ingredients

  • 1 tablespoon olive oil
  • 1 can diced tomatoes
  • 0.25 cup scallions
  • 1 teaspoon cumin
  • 0.5 cup Monterey Jack cheese
  • 0.25 cup cilantro
  • Salt and pepper
  • 0.25 cup chipotle peppers
  • 4 corn tortillas
  • 0.5 cup queso fresco
  • 4 large eggs
  • 2 cloves garlic
  • 0.5 teaspoon smoked paprika

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a medium bowl, whisk together cumin, smoked paprika, salt, and pepper.
  3. Step 3: In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute.
  4. Step 4: Add diced tomatoes, chipotle peppers, and cumin mixture to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Step 5: Using a fork, create 4 wells in the tomato mixture. Crack an egg into each well.
