Description
A spicy twist on traditional Huevos Rancheros, featuring chipotle peppers in adobo sauce and crispy tortillas.
Ingredients
- 1 tablespoon olive oil
- 1 can diced tomatoes
- 0.25 cup scallions
- 1 teaspoon cumin
- 0.5 cup Monterey Jack cheese
- 0.25 cup cilantro
- Salt and pepper
- 0.25 cup chipotle peppers
- 4 corn tortillas
- 0.5 cup queso fresco
- 4 large eggs
- 2 cloves garlic
- 0.5 teaspoon smoked paprika
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a medium bowl, whisk together cumin, smoked paprika, salt, and pepper.
- Step 3: In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute.
- Step 4: Add diced tomatoes, chipotle peppers, and cumin mixture to the skillet. Cook for 5 minutes, stirring occasionally.
- Step 5: Using a fork, create 4 wells in the tomato mixture. Crack an egg into each well.
- Step 6: Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the whites are set and the yolks are still runny.
- Step 7: While the eggs are baking, toast the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 8: To assemble the dish, place a toasted tortilla on a plate, top with a baked egg, spoon some of the tomato mixture over the egg, and sprinkle with cheese, cilantro, and scallions.
- Step 9: Repeat with remaining ingredients.
