Chipotle Steak Burrito

Description

A Chipotle-style burrito filled with grilled steak, rice, beans, and roasted vegetables

Ingredients

  • 1 cup white rice
  • 1 cup water
  • 2 cloves garlic
  • Sour cream
  • 1 red bell pepper
  • 1 teaspoon cumin
  • 0.25 cup cilantro
  • 1 tablespoon olive oil
  • 1 small red onion
  • 1 teaspoon smoked paprika
  • 8 large flour tortillas
  • 1 cup Monterey Jack cheese
  • 1.5 lbs flank steak
  • 1 can black beans
  • Salsa
  • Salt and pepper
  • 0.25 teaspoon cayenne pepper

Instructions

  1. Step 1: Preheat grill to medium-high heat.
  2. Step 2: In a small bowl, whisk together cumin, smoked paprika, and cayenne pepper.
  3. Step 3: Rub spice mixture onto both sides of the steak, then season with salt and pepper.
  4. Step 4: Grill steak for 5-7 minutes per side, or until cooked to desired level of doneness.
  5. Step 5: Transfer steak to a cutting board and let rest for 5 minutes before slicing into thin strips.
  6. Step 6: In a medium saucepan, bring rice and water to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender.
  7. Step 7: In a large skillet, heat olive oil over medium heat.
  8. Step 8: Add diced onion and cook, stirring occasionally, for 5 minutes, or until softened.
  9. Step 9: Add diced bell pepper and cook, stirring occasionally, for 5 minutes, or until tender.
  10. Step 10: Add garlic and cook, stirring constantly, for 1 minute.
  11. Step 11: Stir in black beans, cumin, and smoked paprika.
  12. Step 12: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  13. Step 13: Assemble burritos by filling tortillas with sliced steak, rice, bean and vegetable mixture, cheese, and cilantro.
  14. Step 14: Serve with salsa and sour cream.
