Description
A Chipotle-style burrito filled with grilled steak, rice, beans, and roasted vegetables
Ingredients
- 1 cup white rice
- 1 cup water
- 2 cloves garlic
- Sour cream
- 1 red bell pepper
- 1 teaspoon cumin
- 0.25 cup cilantro
- 1 tablespoon olive oil
- 1 small red onion
- 1 teaspoon smoked paprika
- 8 large flour tortillas
- 1 cup Monterey Jack cheese
- 1.5 lbs flank steak
- 1 can black beans
- Salsa
- Salt and pepper
- 0.25 teaspoon cayenne pepper
Instructions
- Step 1: Preheat grill to medium-high heat.
- Step 2: In a small bowl, whisk together cumin, smoked paprika, and cayenne pepper.
- Step 3: Rub spice mixture onto both sides of the steak, then season with salt and pepper.
- Step 4: Grill steak for 5-7 minutes per side, or until cooked to desired level of doneness.
- Step 5: Transfer steak to a cutting board and let rest for 5 minutes before slicing into thin strips.
- Step 6: In a medium saucepan, bring rice and water to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender.
- Step 7: In a large skillet, heat olive oil over medium heat.
- Step 8: Add diced onion and cook, stirring occasionally, for 5 minutes, or until softened.
- Step 9: Add diced bell pepper and cook, stirring occasionally, for 5 minutes, or until tender.
- Step 10: Add garlic and cook, stirring constantly, for 1 minute.
- Step 11: Stir in black beans, cumin, and smoked paprika.
- Step 12: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 13: Assemble burritos by filling tortillas with sliced steak, rice, bean and vegetable mixture, cheese, and cilantro.
- Step 14: Serve with salsa and sour cream.
