Chorizo and Egg Breakfast Quesadilla

Description
A spicy breakfast twist on the classic quesadilla, filled with chorizo, scrambled eggs, and melted cheese
Ingredients
- 1 cup Monterey Jack cheese
- 0.5 cup cilantro
- 1 lb Mexican chorizo
- Salt and pepper
- 2 cloves garlic
- 1 medium onion
- 1 tablespoon vegetable oil
- 4 large flour tortillas
- 4 large eggs
- 0.5 cup Cheddar cheese
Instructions
- Step 1: In a large skillet, heat the oil over medium-high heat. Add the chorizo and cook, breaking up with a spoon, until browned, about 5 minutes.
- Step 2: Add the onion and garlic to the skillet and cook until the onion is translucent, about 3 minutes.
- Step 3: In a large bowl, whisk together the eggs and a pinch of salt. Pour the eggs over the chorizo mixture in the skillet and scramble until the eggs are cooked through.
- Step 4: In a large bowl, combine the cooked egg mixture, Monterey Jack cheese, and Cheddar cheese.
- Step 5: Heat a large non-stick skillet or griddle over medium heat. Place a tortilla in the skillet and sprinkle a quarter of the egg and cheese mixture onto half of the tortilla.
- Step 6: Fold the tortilla in half to enclose the filling. Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.
- Step 7: Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.
- Step 8: Repeat with the remaining tortillas and filling.
- Step 9: Cut the quesadillas into wedges and garnish with cilantro. Serve hot.
