Chorizo and Potato Breakfast Quesadilla

Description
A flavorful breakfast quesadilla filled with chorizo, potatoes, and cheese
Ingredients
- 4 large flour tortillas
- 1 large onion
- 1 tsp cumin
- 2 cloves garlic
- Vegetable oil
- 0.5 cup cilantro
- 2 large potatoes
- Salt and pepper
- 2 large eggs
- 1 lb Mexican chorizo
- 1 tsp smoked paprika
- 1 cup Monterey Jack cheese
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a large skillet, cook the chorizo over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
- Step 3: Add the diced onion and cook until translucent, about 3-4 minutes.
- Step 4: Add the diced potatoes, cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, until the potatoes are tender, about 10-12 minutes.
- Step 5: In a large bowl, whisk together the eggs and a pinch of salt. Set aside.
- Step 6: In a large skillet, warm the tortillas over medium heat for about 30 seconds on each side. This will make them more pliable.
- Step 7: To assemble the quesadillas, lay a tortilla flat and sprinkle a quarter of the cheese on half of the tortilla.
- Step 8: Add a quarter of the chorizo and potato mixture on top of the cheese, followed by a sprinkle of cilantro.
- Step 9: Pour a quarter of the whisked eggs over the filling.
- Step 10: Fold the tortilla in half to enclose the filling. Repeat with the remaining ingredients.
- Step 11: Brush the tops of the quesadillas with a little vegetable oil and cook in the oven for 10-12 minutes, or until the tortillas are crispy and the cheese is melted.
- Step 12: Cut into wedges and serve hot.
