Chorizo and Potato Breakfast Quesadilla

Description

A flavorful breakfast quesadilla filled with chorizo, potatoes, and cheese

Ingredients

  • 4 large flour tortillas
  • 1 large onion
  • 1 tsp cumin
  • 2 cloves garlic
  • Vegetable oil
  • 0.5 cup cilantro
  • 2 large potatoes
  • Salt and pepper
  • 2 large eggs
  • 1 lb Mexican chorizo
  • 1 tsp smoked paprika
  • 1 cup Monterey Jack cheese

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a large skillet, cook the chorizo over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
  3. Step 3: Add the diced onion and cook until translucent, about 3-4 minutes.
  4. Step 4: Add the diced potatoes, cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, until the potatoes are tender, about 10-12 minutes.
  5. Step 5: In a large bowl, whisk together the eggs and a pinch of salt. Set aside.
  6. Step 6: In a large skillet, warm the tortillas over medium heat for about 30 seconds on each side. This will make them more pliable.
  7. Step 7: To assemble the quesadillas, lay a tortilla flat and sprinkle a quarter of the cheese on half of the tortilla.
  8. Step 8: Add a quarter of the chorizo and potato mixture on top of the cheese, followed by a sprinkle of cilantro.
  9. Step 9: Pour a quarter of the whisked eggs over the filling.
  10. Step 10: Fold the tortilla in half to enclose the filling. Repeat with the remaining ingredients.
  11. Step 11: Brush the tops of the quesadillas with a little vegetable oil and cook in the oven for 10-12 minutes, or until the tortillas are crispy and the cheese is melted.
  12. Step 12: Cut into wedges and serve hot.
