Ingredients
- 3 cups whole milk
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 0.25 cup sugar
- 0.25 teaspoon salt
- 0.5 teaspoon cinnamon
- 2 cups white rice
- 0.25 cup raisins
- 2 tablespoons butter
Instructions
- Step 1: In a medium saucepan, combine rice, milk, sugar, cinnamon, and salt. Cook over medium heat, stirring constantly, until the rice is tender and the mixture comes to a boil.
- Step 2: Remove the saucepan from the heat and stir in the raisins and butter until the butter is melted.
- Step 3: In a small bowl, whisk together the egg yolks and vanilla extract. Gradually add a little of the warm rice mixture to the egg yolks, whisking constantly to prevent the eggs from scrambling.
- Step 4: Return the saucepan to the heat and add the egg yolk mixture. Cook over low heat, stirring constantly, until the pudding thickens.
- Step 5: Remove the saucepan from the heat and let the pudding cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.
- Step 6: Serve the pudding chilled, garnished with additional cinnamon if desired.
