Description
Creamy and flavorful New England-style clam chowder
Ingredients
- 0.5 cup milk
- 2 tablespoons butter
- 2 potatoes
- 1 pound clams
- 0.5 cup heavy cream
- 1 medium onion
- 2 cloves garlic
- 1 teaspoon thyme
- Salt and pepper
- 1 cup clam juice
Instructions
- Step 1: Melt butter in a large pot over medium heat
- Step 2: Add onion and garlic and cook until softened, about 5 minutes
- Step 3: Add clams, clam juice, milk, heavy cream, potatoes, thyme, salt, and pepper
- Step 4: Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes
- Step 5: Use an immersion blender to puree the soup until smooth
- Step 6: Serve hot
