Description

Poached eggs on toasted English muffins with ham and hollandaise sauce

Ingredients

  • 4 English muffins
  • 4 slices Canadian bacon
  • 1 cup hollandaise sauce
  • Salt and pepper
  • 4 eggs

Instructions

  1. Step 1: Bring a pot of water to a boil and reduce to a simmer. Add 1 tablespoon white vinegar to the water.
  2. Step 2: Crack 1 egg into a small bowl and gently pour into the water. Cook for 3-4 minutes or until the whites are set and the yolks are cooked to desired doneness. Repeat with remaining eggs.
  3. Step 3: Meanwhile, toast the English muffins and cook the Canadian bacon slices until lightly browned.
  4. Step 4: To assemble, place a toasted English muffin half on a plate, top with a slice of Canadian bacon, a poached egg, and spoon hollandaise sauce over the top.
