Description
A flavorful breakfast dish featuring cod, sweet potatoes, and a tangy lemon-herb sauce
Ingredients
- 2 large sweet potatoes
- 2 tbsp olive oil
- 0.25 cup dill
- 1 tsp thyme
- 2 cloves garlic
- 4 fillets cod
- 1 cup panko breadcrumbs
- 2 large eggs
- 0.25 cup lemon juice
- 0.25 cup parsley
- Salt and pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Line a baking sheet with parchment paper.
- Step 3: Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper on the prepared baking sheet. Roast for 20-25 minutes or until tender.
- Step 4: In a medium bowl, whisk together lemon juice, garlic, parsley, dill, thyme, salt, and pepper.
- Step 5: Add the cod fillets to the bowl and marinate for at least 10 minutes.
- Step 6: In a separate bowl, whisk eggs and set aside.
- Step 7: Remove cod from marinade and coat with panko breadcrumbs.
- Step 8: Heat remaining 1 tbsp olive oil in a large non-stick skillet over medium heat. Cook cod for 3-4 minutes per side or until cooked through.
- Step 9: Serve cod with roasted sweet potatoes and a side of lemon-herb sauce (marinade).
