Description

A flavorful breakfast dish featuring cod, sweet potatoes, and a tangy lemon-herb sauce

Ingredients

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 0.25 cup dill
  • 1 tsp thyme
  • 2 cloves garlic
  • 4 fillets cod
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 0.25 cup lemon juice
  • 0.25 cup parsley
  • Salt and pepper

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Line a baking sheet with parchment paper.
  3. Step 3: Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper on the prepared baking sheet. Roast for 20-25 minutes or until tender.
  4. Step 4: In a medium bowl, whisk together lemon juice, garlic, parsley, dill, thyme, salt, and pepper.
  5. Step 5: Add the cod fillets to the bowl and marinate for at least 10 minutes.
  6. Step 6: In a separate bowl, whisk eggs and set aside.
  7. Step 7: Remove cod from marinade and coat with panko breadcrumbs.
  8. Step 8: Heat remaining 1 tbsp olive oil in a large non-stick skillet over medium heat. Cook cod for 3-4 minutes per side or until cooked through.
  9. Step 9: Serve cod with roasted sweet potatoes and a side of lemon-herb sauce (marinade).
