Description
Classic French dish of braised chicken cooked in red wine, mushrooms, onions, and bacon
Ingredients
- 6 slices bacon
- 2 carrots
- 1 large onion
- 0.5 teaspoon salt
- 1 cup chicken broth
- 0.5 pounds chicken thighs
- 1 teaspoon thyme
- 1 tablespoon tomato paste
- 2 cloves garlic
- 1 cup red wine
- 2 stalks celery
- 0.25 teaspoon black pepper
- 2 leaves bay
- 2 cups mushrooms
Instructions
- Step 1: Cook the diced bacon in a large Dutch oven over medium heat until crispy. Remove the bacon from the pot and set aside.
- Step 2: Add the sliced onions to the pot and cook until they are softened and lightly browned. Add the minced garlic and cook for 1 minute.
- Step 3: Add the sliced mushrooms to the pot and cook until they are softened and lightly browned.
- Step 4: Add the chicken thighs to the pot and cook until they are browned on all sides.
- Step 5: Add the red wine, chicken broth, tomato paste, thyme, salt, and pepper to the pot. Stir to combine.
- Step 6: Add the cooked bacon, sliced carrots, and sliced celery to the pot. Stir to combine.
- Step 7: Cover the pot and bring the mixture to a boil. Reduce the heat to low and simmer for 25-30 minutes or until the chicken is cooked through.
- Step 8: Remove the bay leaves and serve the Coq au Vin hot, garnished with fresh parsley or thyme.
