Description

Classic French dish of braised chicken cooked in red wine, mushrooms, onions, and bacon

Ingredients

  • 6 slices bacon
  • 2 carrots
  • 1 large onion
  • 0.5 teaspoon salt
  • 1 cup chicken broth
  • 0.5 pounds chicken thighs
  • 1 teaspoon thyme
  • 1 tablespoon tomato paste
  • 2 cloves garlic
  • 1 cup red wine
  • 2 stalks celery
  • 0.25 teaspoon black pepper
  • 2 leaves bay
  • 2 cups mushrooms

Instructions

  1. Step 1: Cook the diced bacon in a large Dutch oven over medium heat until crispy. Remove the bacon from the pot and set aside.
  2. Step 2: Add the sliced onions to the pot and cook until they are softened and lightly browned. Add the minced garlic and cook for 1 minute.
  3. Step 3: Add the sliced mushrooms to the pot and cook until they are softened and lightly browned.
  4. Step 4: Add the chicken thighs to the pot and cook until they are browned on all sides.
  5. Step 5: Add the red wine, chicken broth, tomato paste, thyme, salt, and pepper to the pot. Stir to combine.
  6. Step 6: Add the cooked bacon, sliced carrots, and sliced celery to the pot. Stir to combine.
  7. Step 7: Cover the pot and bring the mixture to a boil. Reduce the heat to low and simmer for 25-30 minutes or until the chicken is cooked through.
  8. Step 8: Remove the bay leaves and serve the Coq au Vin hot, garnished with fresh parsley or thyme.
