Description
A hearty breakfast dish made with corned beef, potatoes, and onions
Ingredients
- 1 large onion
- Salt and pepper
- 2 cloves garlic
- 4 eggs
- 1 pound corned beef
- 2 tablespoons butter
- 2 large potatoes
Instructions
- Step 1: Boil the diced potatoes in a large pot of salted water until tender, about 10-12 minutes.
- Step 2: In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the diced onion and cook until translucent, about 5 minutes.
- Step 3: Add the diced corned beef to the skillet and cook until browned, about 5 minutes.
- Step 4: Drain the cooked potatoes and add them to the skillet with the corned beef and onion. Stir to combine.
- Step 5: Make 4 wells in the potato mixture and crack an egg into each well.
- Step 6: Cover the skillet with a lid and cook until the eggs are cooked to desired doneness, about 5-7 minutes.
- Step 7: Season with salt and pepper to taste.
