Ingredients

  • 1 large onion
  • Salt and pepper
  • 2 cloves garlic
  • 4 eggs
  • 1 pound corned beef
  • 2 tablespoons butter
  • 2 large potatoes

Instructions

  1. Step 1: Boil the diced potatoes in a large pot of salted water until tender, about 10-12 minutes.
  2. Step 2: In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the diced onion and cook until translucent, about 5 minutes.
  3. Step 3: Add the diced corned beef to the skillet and cook until browned, about 5 minutes.
  4. Step 4: Drain the cooked potatoes and add them to the skillet with the corned beef and onion. Stir to combine.
  5. Step 5: Make 4 wells in the potato mixture and crack an egg into each well.
