Cranberry Walnut Kale Salad

Description

A refreshing winter salad featuring curly kale, sweet cranberries, and crunchy walnuts

Ingredients

  • 0.5 cup walnuts
  • 0.5 cup goat cheese
  • Salt and pepper
  • 1 cup cranberries
  • 1 tsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 cups kale
  • 0.25 cup olive oil

Instructions

  1. Step 1: In a large bowl, massage the kale with your hands for about 2-3 minutes to tenderize it
  2. Step 2: In a blender or food processor, blend the cranberries, olive oil, apple cider vinegar, Dijon mustard, salt, and pepper until coarsely chopped
  3. Step 3: Pour the cranberry dressing over the kale and toss to coat
  4. Step 4: Sprinkle the chopped walnuts and crumbled goat cheese over the top of the kale
  5. Step 5: Toss gently to combine
