Description
A refreshing winter salad featuring curly kale, sweet cranberries, and crunchy walnuts
Ingredients
- 0.5 cup walnuts
- 0.5 cup goat cheese
- Salt and pepper
- 1 cup cranberries
- 1 tsp Dijon mustard
- 2 tbsp apple cider vinegar
- 2 cups kale
- 0.25 cup olive oil
Instructions
- Step 1: In a large bowl, massage the kale with your hands for about 2-3 minutes to tenderize it
- Step 2: In a blender or food processor, blend the cranberries, olive oil, apple cider vinegar, Dijon mustard, salt, and pepper until coarsely chopped
- Step 3: Pour the cranberry dressing over the kale and toss to coat
- Step 4: Sprinkle the chopped walnuts and crumbled goat cheese over the top of the kale
- Step 5: Toss gently to combine
- Step 6: Serve immediately
