Creamy Beef Stroganoff

Description
Tender beef, mushrooms, and a rich creamy sauce served over egg noodles.
Ingredients
- 8 ounces mushrooms
- 1 cup beef broth
- 1 pound beef strips
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 2 cloves garlic
- parsley
- 2 tablespoons butter
- 1 medium onion
- 0.25 teaspoon black pepper
- 8 ounces sour cream
- 1 cup egg noodles
- 2 tablespoons Dijon mustard
- 0.5 teaspoon salt
Instructions
- Step 1: Cook egg noodles according to package instructions.
- Step 2: In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add beef and cook until browned, about 3-4 minutes. Remove from skillet and set aside.
- Step 3: In the same skillet, add the remaining 1 tablespoon of butter. Add onion and garlic and cook until onion is translucent, about 3-4 minutes.
- Step 4: Add mushrooms to the skillet and cook until they release their liquid and start to brown, about 5 minutes.
- Step 5: Add beef broth, tomato paste, mustard, paprika, salt, and pepper to the skillet. Stir to combine and bring to a simmer.
- Step 6: Return beef to the skillet and cook until heated through, about 2-3 minutes.
- Step 7: Stir in sour cream and cook until heated through, about 1-2 minutes.
- Step 8: Serve beef and sauce over cooked egg noodles and garnish with parsley.
