Creamy Beef Stroganoff

Description

Tender beef, mushrooms, and a rich creamy sauce served over egg noodles.

Ingredients

  • 8 ounces mushrooms
  • 1 cup beef broth
  • 1 pound beef strips
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 2 cloves garlic
  • parsley
  • 2 tablespoons butter
  • 1 medium onion
  • 0.25 teaspoon black pepper
  • 8 ounces sour cream
  • 1 cup egg noodles
  • 2 tablespoons Dijon mustard
  • 0.5 teaspoon salt

Instructions

  1. Step 1: Cook egg noodles according to package instructions.
  2. Step 2: In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add beef and cook until browned, about 3-4 minutes. Remove from skillet and set aside.
  3. Step 3: In the same skillet, add the remaining 1 tablespoon of butter. Add onion and garlic and cook until onion is translucent, about 3-4 minutes.
  4. Step 4: Add mushrooms to the skillet and cook until they release their liquid and start to brown, about 5 minutes.
  5. Step 5: Add beef broth, tomato paste, mustard, paprika, salt, and pepper to the skillet. Stir to combine and bring to a simmer.
  6. Step 6: Return beef to the skillet and cook until heated through, about 2-3 minutes.
  7. Step 7: Stir in sour cream and cook until heated through, about 1-2 minutes.
  8. Step 8: Serve beef and sauce over cooked egg noodles and garnish with parsley.
