Ingredients

  • 2 cups fresh tomatoes
  • 0.5 cup heavy cream
  • 3 cloves garlic
  • 2 tablespoons butter
  • Salt and pepper
  • 1 teaspoon dried oregano
  • 0.25 cup basil
  • 1 medium onion
  • 1 cup chicken or vegetable broth

Instructions

  1. Step 1: Melt butter in a large pot over medium heat.
  2. Step 2: Add chopped onion and cook until softened, about 5 minutes.
  3. Step 3: Add minced garlic and cook for 1 minute, until fragrant.
  4. Step 4: Add chopped fresh tomatoes, broth, and dried oregano. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Step 5: Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot.
  6. Step 6: Stir in heavy cream and cook for an additional 2-3 minutes, until heated through.
