Description
A rich and creamy soup made with fresh tomatoes, basil, and a hint of garlic
Ingredients
- 2 cups fresh tomatoes
- 0.5 cup heavy cream
- 3 cloves garlic
- 2 tablespoons butter
- Salt and pepper
- 1 teaspoon dried oregano
- 0.25 cup basil
- 1 medium onion
- 1 cup chicken or vegetable broth
Instructions
- Step 1: Melt butter in a large pot over medium heat.
- Step 2: Add chopped onion and cook until softened, about 5 minutes.
- Step 3: Add minced garlic and cook for 1 minute, until fragrant.
- Step 4: Add chopped fresh tomatoes, broth, and dried oregano. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Step 5: Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot.
- Step 6: Stir in heavy cream and cook for an additional 2-3 minutes, until heated through.
- Step 7: Stir in chopped fresh basil. Season with salt and pepper to taste.
- Step 8: Serve hot, garnished with additional basil if desired.
