Crispy Avocado Egg Rolls

Description
A crispy and delicious egg roll filled with avocado, served with a sweet chili sauce
Ingredients
- Vegetable oil
- 0.25 cup scallions
- 1 tablespoon sesame oil
- 2 cloves garlic
- 0.5 cup chicken breast
- 0.25 cup cilantro
- 1 package egg roll wrappers
- 0.25 cup carrot
- 2 avocados
- Sweet chili sauce
- 1 tablespoon soy sauce
Instructions
- Step 1: In a large bowl, combine avocado, chicken, cilantro, carrot, scallions, garlic, soy sauce, and sesame oil. Mix well.
- Step 2: Lay an egg roll wrapper on a flat surface with one corner pointing towards you.
- Step 3: Place about 1 tablespoon of the avocado mixture in the center of the wrapper.
- Step 4: Brush the edges of the wrapper with a little water.
- Step 5: Fold the bottom corner over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder. Repeat with the remaining wrappers and filling.
- Step 6: Heat about 2-3 inches of vegetable oil in a large skillet over medium-high heat.
- Step 7: When the oil is hot, add a few of the egg rolls to the skillet (do not overcrowd).
- Step 8: Fry the egg rolls until they are golden brown and crispy, about 3-4 minutes on each side.
- Step 9: Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
- Step 10: Serve the egg rolls hot with sweet chili sauce.
