Description
A twist on traditional tacos, featuring crispy avocado, spicy slaw, and creamy chipotle tahini sauce
Ingredients
- Vegetable oil
- 2 tablespoons lime juice
- 0.25 cup chipotle tahini sauce
- 1 cup buttermilk
- 2 eggs
- 1 teaspoon paprika
- 0.25 cup cilantro
- 4 tortillas corn
- 1 cup panko breadcrumbs
- 3 avocados
- 1 cup red cabbage
- 0.5 teaspoon salt
- 0.25 cup queso fresco
- 1 cup all-purpose flour
- 1 cup carrots
- 0.25 teaspoon black pepper
- 0.5 teaspoon cayenne pepper
Instructions
- Step 1: Cut the avocados in half, remove the pit, and slice into 1/4-inch thick wedges
- Step 2: In a shallow dish, mix together the flour, paprika, cayenne pepper, salt, and black pepper
- Step 3: Dip each avocado wedge into the flour mixture, shaking off excess, then into the beaten eggs, and finally into the panko breadcrumbs, pressing the crumbs onto the avocado to adhere
- Step 4: Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat
- Step 5: Fry the breaded avocado wedges until golden brown and crispy, about 2-3 minutes per side
- Step 6: Drain the fried avocado on paper towels
- Step 7: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
- Step 8: Assemble the tacos by placing a few pieces of the fried avocado onto a warmed tortilla, followed by a spoonful of the spicy slaw, a dollop of chipotle tahini sauce, and a sprinkle of queso fresco
- Step 9: Repeat with the remaining ingredients
