Ingredients

  • Vegetable oil
  • 2 tablespoons lime juice
  • 0.25 cup chipotle tahini sauce
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon paprika
  • 0.25 cup cilantro
  • 4 tortillas corn
  • 1 cup panko breadcrumbs
  • 3 avocados
  • 1 cup red cabbage
  • 0.5 teaspoon salt
  • 0.25 cup queso fresco
  • 1 cup all-purpose flour
  • 1 cup carrots
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper

Instructions

  1. Step 1: Cut the avocados in half, remove the pit, and slice into 1/4-inch thick wedges
  2. Step 2: In a shallow dish, mix together the flour, paprika, cayenne pepper, salt, and black pepper
  3. Step 3: Dip each avocado wedge into the flour mixture, shaking off excess, then into the beaten eggs, and finally into the panko breadcrumbs, pressing the crumbs onto the avocado to adhere
  4. Step 4: Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat
  5. Step 5: Fry the breaded avocado wedges until golden brown and crispy, about 2-3 minutes per side
  6. Step 6: Drain the fried avocado on paper towels
  7. Step 7: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
  8. Step 8: Assemble the tacos by placing a few pieces of the fried avocado onto a warmed tortilla, followed by a spoonful of the spicy slaw, a dollop of chipotle tahini sauce, and a sprinkle of queso fresco
