Description
A tropical twist on classic shrimp, coated in a crunchy coconut flake crust
Ingredients
- 1 cup panko breadcrumbs
- 0.25 cup sugar
- Vegetable oil
- 0.5 cup unsweetened shredded coconut
- 0.25 cup butter
- 0.5 teaspoon salt
- 2 eggs
- 0.25 teaspoon black pepper
- 1 cup flour
- 1 pound shrimp
- 0.25 teaspoon cayenne pepper
Instructions
- Step 1: In a medium bowl, mix together panko breadcrumbs, unsweetened shredded coconut, granulated sugar, salt, black pepper, and cayenne pepper
- Step 2: In a separate bowl, beat the eggs
- Step 3: In a third bowl, place the flour
- Step 4: Dip each shrimp into the flour, then the eggs, and finally the coconut mixture, pressing gently to adhere
- Step 5: Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat
- Step 6: Fry the coconut shrimp in batches until golden brown, about 2-3 minutes per side
