Description

Breaded and fried eggplant slices topped with marinara sauce and melted mozzarella cheese

Ingredients

  • 2 tbsp olive oil
  • 1 tsp black pepper
  • 2 large eggplants
  • 1 tsp salt
  • 1 cup Parmesan cheese
  • 1 cup breadcrumbs
  • 1 cup mozzarella cheese
  • 1 cup marinara sauce
  • 2 cloves garlic
  • 1 cup all-purpose flour
  • 1 tsp Italian seasoning

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C)
  2. Step 2: In a shallow dish, mix together flour, salt, pepper, and Italian seasoning
  3. Step 3: In another shallow dish, beat the eggs
  4. Step 4: In a third shallow dish, mix together breadcrumbs and Parmesan cheese
  5. Step 5: Dip each eggplant slice first in the flour mixture, then in the eggs, and finally in the breadcrumb mixture, pressing gently to adhere
  6. Step 6: Heat the olive oil in a large skillet over medium-high heat and fry the eggplant slices until golden brown and crispy, about 3-4 minutes per side
  7. Step 7: Transfer the eggplant slices to a baking dish and spoon marinara sauce over each slice
  8. Step 8: Sprinkle shredded mozzarella cheese over the top of each slice
  9. Step 9: Bake for 20-25 minutes, or until the cheese is melted and bubbly
