Description
Breaded and fried eggplant slices topped with marinara sauce and melted mozzarella cheese
Ingredients
- 2 tbsp olive oil
- 1 tsp black pepper
- 2 large eggplants
- 1 tsp salt
- 1 cup Parmesan cheese
- 1 cup breadcrumbs
- 1 cup mozzarella cheese
- 1 cup marinara sauce
- 2 cloves garlic
- 1 cup all-purpose flour
- 1 tsp Italian seasoning
Instructions
- Step 1: Preheat the oven to 400°F (200°C)
- Step 2: In a shallow dish, mix together flour, salt, pepper, and Italian seasoning
- Step 3: In another shallow dish, beat the eggs
- Step 4: In a third shallow dish, mix together breadcrumbs and Parmesan cheese
- Step 5: Dip each eggplant slice first in the flour mixture, then in the eggs, and finally in the breadcrumb mixture, pressing gently to adhere
- Step 6: Heat the olive oil in a large skillet over medium-high heat and fry the eggplant slices until golden brown and crispy, about 3-4 minutes per side
- Step 7: Transfer the eggplant slices to a baking dish and spoon marinara sauce over each slice
- Step 8: Sprinkle shredded mozzarella cheese over the top of each slice
- Step 9: Bake for 20-25 minutes, or until the cheese is melted and bubbly
