Ingredients

  • 1 head lettuce
  • Salt and pepper
  • 8 tortillas corn
  • 1 cup cheddar cheese
  • 1 avocado
  • 1 tablespoon olive oil
  • 0.5 medium onion
  • 0.25 cup cilantro
  • 1 can diced tomatoes
  • 2 cloves garlic
  • 1 packet taco seasoning
  • 0.5 medium bell pepper
  • 1 lb ground beef

Instructions

  1. Step 1: In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  2. Step 2: Add the diced bell pepper and cook for an additional 2-3 minutes, until tender.
  3. Step 3: Add the garlic and cook for 1 minute, until fragrant.
  4. Step 4: Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
  5. Step 5: Add the taco seasoning and stir to combine. Cook for 1-2 minutes, until the flavors are absorbed.
  6. Step 6: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  7. Step 7: Assemble the wraps by spooning the beef mixture onto a tortilla, followed by a spoonful of diced tomatoes, some shredded lettuce, sliced avocado, and shredded cheese.
  8. Step 8: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the wrap up tightly. Repeat with the remaining ingredients.
