Ingredients

  • 1 cup yogurt
  • 0.5 teaspoon salt
  • 2 tablespoons lemon juice
  • 0.25 cup mint leaves
  • 0.25 teaspoon black pepper
  • 1 large cucumber
  • 0.5 teaspoon cumin

Instructions

  1. Step 1: In a large bowl, combine the grated cucumber and salt. Let it sit for 10 minutes to allow the cucumber to release its excess water.
  2. Step 2: Squeeze out as much water from the cucumber as possible using a cheesecloth or a fine mesh sieve.
  3. Step 3: In a separate bowl, whisk together the yogurt, cumin, black pepper, and lemon juice.
  4. Step 4: Add the chopped mint leaves to the yogurt mixture and stir well.
  5. Step 5: Add the drained cucumber to the yogurt mixture and stir gently to combine.
  6. Step 6: Chill the raita in the refrigerator for at least 30 minutes before serving.
