Ingredients
- 1 cup yogurt
- 0.5 teaspoon salt
- 2 tablespoons lemon juice
- 0.25 cup mint leaves
- 0.25 teaspoon black pepper
- 1 large cucumber
- 0.5 teaspoon cumin
Instructions
- Step 1: In a large bowl, combine the grated cucumber and salt. Let it sit for 10 minutes to allow the cucumber to release its excess water.
- Step 2: Squeeze out as much water from the cucumber as possible using a cheesecloth or a fine mesh sieve.
- Step 3: In a separate bowl, whisk together the yogurt, cumin, black pepper, and lemon juice.
- Step 4: Add the chopped mint leaves to the yogurt mixture and stir well.
- Step 5: Add the drained cucumber to the yogurt mixture and stir gently to combine.
- Step 6: Chill the raita in the refrigerator for at least 30 minutes before serving.
