Description

Hearty and flavorful Indian-inspired lentil curry

Ingredients

  • Salt and pepper
  • 1 teaspoon cumin
  • 1 tablespoon curry powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon turmeric
  • 1 can diced tomatoes
  • 3 cloves garlic
  • 0.25 cup coconut milk
  • 2 medium onions
  • 1 medium ginger
  • 2 cups vegetable broth
  • cilantro
  • 1 cup lentils

Instructions

  1. Step 1: In a large pot, heat 2 tablespoons of oil over medium heat
  2. Step 2: Add onions and cook until they start to brown, about 5 minutes
  3. Step 3: Add garlic and ginger and cook for another minute
  4. Step 4: Stir in curry powder, cumin, turmeric, and cayenne pepper and cook for 1-2 minutes
  5. Step 5: Add lentils, diced tomatoes, vegetable broth, and coconut milk
  6. Step 6: Bring to a boil, then reduce heat to low and simmer for 20-25 minutes or until lentils are tender
  7. Step 7: Season with salt and pepper to taste
  8. Step 8: Garnish with chopped cilantro and serve over rice or with naan
