Description
Hearty and flavorful Indian-inspired lentil curry
Ingredients
- Salt and pepper
- 1 teaspoon cumin
- 1 tablespoon curry powder
- 0.5 teaspoon cayenne pepper
- 0.5 teaspoon turmeric
- 1 can diced tomatoes
- 3 cloves garlic
- 0.25 cup coconut milk
- 2 medium onions
- 1 medium ginger
- 2 cups vegetable broth

- 1 cup lentils
Instructions
- Step 1: In a large pot, heat 2 tablespoons of oil over medium heat
- Step 2: Add onions and cook until they start to brown, about 5 minutes
- Step 3: Add garlic and ginger and cook for another minute
- Step 4: Stir in curry powder, cumin, turmeric, and cayenne pepper and cook for 1-2 minutes
- Step 5: Add lentils, diced tomatoes, vegetable broth, and coconut milk
- Step 6: Bring to a boil, then reduce heat to low and simmer for 20-25 minutes or until lentils are tender
- Step 7: Season with salt and pepper to taste
- Step 8: Garnish with chopped cilantro and serve over rice or with naan
