Ingredients
- 2 medium-sized apples
- 1 cup cherry tomatoes
- 1 teaspoon honey
- 2 tablespoons mayonnaise
- 0.5 cup Greek yogurt
- 0.5 cup cucumber
- 0.5 pounds chicken breast
- 2 cups mixed greens
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup cilantro
- 2 tablespoons curry powder
- 4 large flour tortillas
Instructions
- Step 1: Preheat a grill or grill pan to medium-high heat.
- Step 2: Season the chicken with salt, pepper, and curry powder. Grill the chicken for 5-6 minutes per side, or until cooked through.
- Step 3: Chill the cooked chicken in the refrigerator for at least 30 minutes.
- Step 4: In a large bowl, whisk together the yogurt, mayonnaise, honey, salt, and pepper.
- Step 5: Dice the chilled chicken and add it to the bowl with the yogurt mixture. Stir until coated.
- Step 6: Add the diced apple to the bowl and stir to combine.
