Description
A spicy Sichuan noodle dish topped with savory sauce, crispy pork, and scallions
Ingredients
- 0.25 cup scallions
- 1 tablespoon ginger
- 2 cloves garlic
- 250 g pork
- 0.25 cup peanuts
- 2 tablespoons chili oil
- 200 g wheat noodles
- 2 tablespoons vegetable oil
- 2 tablespoons Shaoxing wine
- 2 tablespoons Sichuan peppercorns
- 1 tablespoon fermented bean paste
- 1 tablespoon cornstarch
- 2 tablespoons soy sauce
- 2 tablespoons vinegar
Instructions
- Step 1: Cook the wheat noodles according to the package instructions and set aside
- Step 2: In a pan, heat 1 tablespoon of vegetable oil and cook the ground pork until browned, breaking it up with a spatula as it cooks
- Step 3: Add the minced garlic, ginger, and Sichuan peppercorns to the pan and cook for 1 minute, until fragrant
- Step 4: Add the fermented bean paste, soy sauce, and Shaoxing wine to the pan, stirring to combine
- Step 5: In a small bowl, mix the cornstarch with a splash of water until smooth, then add it to the pan and cook for 1 minute, until the sauce thickens
- Step 6: To assemble the dish, place the cooked noodles in a bowl, then spoon the pork sauce over the top
- Step 7: Garnish with chopped scallions, toasted peanuts, and a drizzle of chili oil and vinegar
