Description

Ingredients

  • 0.25 cup scallions
  • 1 tablespoon ginger
  • 2 cloves garlic
  • 250 g pork
  • 0.25 cup peanuts
  • 2 tablespoons chili oil
  • 200 g wheat noodles
  • 2 tablespoons vegetable oil
  • 2 tablespoons Shaoxing wine
  • 2 tablespoons Sichuan peppercorns
  • 1 tablespoon fermented bean paste
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar

Instructions

  1. Step 1: Cook the wheat noodles according to the package instructions and set aside
  2. Step 2: In a pan, heat 1 tablespoon of vegetable oil and cook the ground pork until browned, breaking it up with a spatula as it cooks
  3. Step 3: Add the minced garlic, ginger, and Sichuan peppercorns to the pan and cook for 1 minute, until fragrant
  4. Step 4: Add the fermented bean paste, soy sauce, and Shaoxing wine to the pan, stirring to combine
  5. Step 5: In a small bowl, mix the cornstarch with a splash of water until smooth, then add it to the pan and cook for 1 minute, until the sauce thickens
  6. Step 6: To assemble the dish, place the cooked noodles in a bowl, then spoon the pork sauce over the top
  7. Step 7: Garnish with chopped scallions, toasted peanuts, and a drizzle of chili oil and vinegar
