Description
Crispy deep-fried tortilla filled with seasoned beef, cheese, and spices
Ingredients
- 1 medium onion
- 1 cup Monterey Jack cheese
- 2 cloves garlic
- 1 pound ground beef
- 1 packet taco seasoning
- 0.25 cup cilantro
- Vegetable oil
- 1 cup cheddar cheese
- 8 large flour tortillas
- Salt and pepper
Instructions
- Step 1: In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.
- Step 2: Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Step 3: Add the taco seasoning to the skillet and stir to combine. Cook for 1-2 minutes.
- Step 4: In a large bowl, combine the cooked beef mixture, shredded cheddar cheese, and shredded Monterey Jack cheese.
- Step 5: Lay a large flour tortilla flat on a work surface and spoon about 1/2 cup of the beef and cheese mixture onto the center of the tortilla.
- Step 6: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the tortilla into a tight cylinder. Repeat with the remaining tortillas and filling.
- Step 7: Heat about 1-2 inches of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
- Step 8: Carefully place 2-3 of the chimichangas into the hot oil and fry until they are golden brown and crispy, about 2-3 minutes per side.
- Step 9: Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil.
- Step 10: Serve the chimichangas hot, garnished with chopped cilantro and your favorite toppings.
