Description

Crispy deep-fried tortilla filled with seasoned beef, cheese, and spices

Ingredients

  • 1 medium onion
  • 1 cup Monterey Jack cheese
  • 2 cloves garlic
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 0.25 cup cilantro
  • Vegetable oil
  • 1 cup cheddar cheese
  • 8 large flour tortillas
  • Salt and pepper

Instructions

  1. Step 1: In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.
  2. Step 2: Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  3. Step 3: Add the taco seasoning to the skillet and stir to combine. Cook for 1-2 minutes.
  4. Step 4: In a large bowl, combine the cooked beef mixture, shredded cheddar cheese, and shredded Monterey Jack cheese.
  5. Step 5: Lay a large flour tortilla flat on a work surface and spoon about 1/2 cup of the beef and cheese mixture onto the center of the tortilla.
  6. Step 6: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the tortilla into a tight cylinder. Repeat with the remaining tortillas and filling.
  7. Step 7: Heat about 1-2 inches of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
  8. Step 8: Carefully place 2-3 of the chimichangas into the hot oil and fry until they are golden brown and crispy, about 2-3 minutes per side.
  9. Step 9: Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil.
  10. Step 10: Serve the chimichangas hot, garnished with chopped cilantro and your favorite toppings.
