Traditional Middle Eastern dish of grape leaves stuffed with a mix of rice, herbs, and spices
Ingredients
- 0.5 teaspoon black pepper
- 1 cup white rice
- 2 cloves garlic
- 20 grape leaves
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon paprika
- 0.25 cup dill
- 0.25 cup scallions
- 0.5 cup parsley
- 0.5 cup ground beef
Instructions
- Step 1: Start by preparing the grape leaves. If using fresh leaves, blanch them in boiling water for 30 seconds. If using jarred leaves, rinse them with water.
- Step 2: In a large mixing bowl, combine the cooked rice, ground beef, parsley, dill, scallions, garlic, salt, pepper, and paprika. Mix well.
- Step 3: To assemble the dolma, lay a grape leaf flat on a work surface, with the stem end facing you. Place about 1 tablespoon of the rice mixture in the center of the leaf.
- Step 4: Fold the stem end over the filling, then fold in the sides and roll the leaf into a neat package. Repeat with the remaining leaves and filling.
- Step 5: In a large pot, heat the olive oil over medium heat. When the oil is hot, add the dolma, seam-side down, in a single layer.
- Step 6: Pour in enough water to cover the dolma and bring to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the grape leaves are tender.
- Step 7: Serve the dolma warm, with a squeeze of lemon juice.
