Description
A Chinese-inspired dish made with scrambled eggs, vegetables, and cooked rice
Ingredients
- Salt and pepper
- 2 eggs
- 1 small onion
- 2 cloves garlic
- 2 cups rice
- 1 teaspoon oyster sauce
- 2 teaspoons soy sauce
- 1 tablespoon vegetable oil
- 1 cup mixed vegetables
Instructions
- Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat
- Step 2: Add the diced onion and minced garlic and stir-fry until they are translucent
- Step 3: Push the onion and garlic to one side of the pan
- Step 4: Add a little more oil if necessary, then pour in the eggs
- Step 5: Scramble the eggs until they are cooked through, breaking them up into small pieces as they cook
- Step 6: Mix the eggs with the onion and garlic
- Step 7: Add the mixed vegetables, cooked rice, soy sauce, and oyster sauce (if using) to the pan
- Step 8: Stir-fry everything together for about 5 minutes, breaking up any clumps with a spatula
- Step 9: Taste and adjust the seasoning as needed
- Step 10: Serve the egg fried rice hot
