Description

Breaded and fried eggplant slices topped with chicken, marinara sauce, and melted mozzarella cheese

Ingredients

  • 2 tbsp olive oil
  • 1 cup mozzarella cheese
  • 1 cup Parmesan cheese
  • 2 eggplants
  • 1 tsp garlic powder
  • 1 cup all-purpose flour
  • 2 lbs chicken breasts
  • 1 cup breadcrumbs
  • 2 cups marinara sauce
  • 1 tsp salt
  • 1 tsp Italian seasoning

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a shallow dish, mix flour, salt, garlic powder, and Italian seasoning.
  3. Step 3: In another dish, beat eggs.
  4. Step 4: In a third dish, mix breadcrumbs and Parmesan cheese.
  5. Step 5: Dip eggplant slices in flour mixture, then eggs, then breadcrumb mixture, coating both sides evenly.
  6. Step 6: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Fry eggplant slices until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  7. Step 7: In the same skillet, add the remaining 1 tablespoon of olive oil. Cook chicken until browned and cooked through, about 5-6 minutes.
  8. Step 8: In a 9x13-inch baking dish, spread a layer of marinara sauce on the bottom. Arrange a layer of fried eggplant slices on top.
  9. Step 9: Add a layer of chicken on top of the eggplant, followed by a layer of marinara sauce and shredded mozzarella cheese.
  10. Step 10: Repeat the layers, ending with a layer of mozzarella cheese on top.
  11. Step 11: Bake for 25-30 minutes, or until cheese is melted and bubbly.
