Description
Breaded and fried eggplant slices topped with marinara sauce and melted mozzarella cheese
Ingredients
- 1 cup breadcrumbs
- 1 cup all-purpose flour
- 2 eggplants
- 2 large eggs
- 1 cup marinara sauce
- 1 cup Parmesan cheese
- 1 tsp salt
- Olive oil
- 1 tsp black pepper
- 1 cup mozzarella cheese
- 1 tsp Italian seasoning
Instructions
- Step 1: Prepare the breading station with flour, eggs, and breadcrumbs
- Step 2: Season the eggplant slices with salt, pepper, and Italian seasoning
- Step 3: Dip each eggplant slice in the flour, then eggs, and finally breadcrumbs
- Step 4: Heat about 1/2 inch of olive oil in a large skillet over medium-high heat
- Step 5: Fry the breaded eggplant slices until golden brown and crispy, about 3-4 minutes per side
- Step 6: Transfer the fried eggplant slices to a baking dish
- Step 7: Spread a layer of marinara sauce on top of the eggplant slices
- Step 8: Sprinkle with Parmesan cheese
- Step 9: Repeat the layers, starting with the eggplant, then marinara sauce, and finally mozzarella cheese
- Step 10: Bake in a preheated oven at 375°F for 30-40 minutes, or until the cheese is melted and bubbly
