Description

Breaded and fried eggplant slices topped with marinara sauce and melted mozzarella cheese

Ingredients

  • 1 cup breadcrumbs
  • 1 cup all-purpose flour
  • 2 eggplants
  • 2 large eggs
  • 1 cup marinara sauce
  • 1 cup Parmesan cheese
  • 1 tsp salt
  • Olive oil
  • 1 tsp black pepper
  • 1 cup mozzarella cheese
  • 1 tsp Italian seasoning

Instructions

  1. Step 1: Prepare the breading station with flour, eggs, and breadcrumbs
  2. Step 2: Season the eggplant slices with salt, pepper, and Italian seasoning
  3. Step 3: Dip each eggplant slice in the flour, then eggs, and finally breadcrumbs
  4. Step 4: Heat about 1/2 inch of olive oil in a large skillet over medium-high heat
  5. Step 5: Fry the breaded eggplant slices until golden brown and crispy, about 3-4 minutes per side
  6. Step 6: Transfer the fried eggplant slices to a baking dish
  7. Step 7: Spread a layer of marinara sauce on top of the eggplant slices
