Ingredients

  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1 cup tomato sauce
  • 1 cup all-purpose flour

  • 2 eggplants
  • 8 oz mozzarella cheese
  • 1 cup Parmesan cheese
  • 1 tsp olive oil

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Prepare the eggplant slices by dredging them in flour, shaking off excess, then dipping in beaten eggs, and finally coating in breadcrumbs.
