Ingredients
- 0.25 cup basil
- 1 tsp Italian seasoning
- 1 tsp salt
- 1 cup tomato sauce
- 1 cup all-purpose flour
- 1 cup breadcrumbs
- 1 tsp garlic powder
- 2 eggplants
- 8 oz mozzarella cheese
- 1 cup Parmesan cheese
- 1 tsp olive oil
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Prepare the eggplant slices by dredging them in flour, shaking off excess, then dipping in beaten eggs, and finally coating in breadcrumbs.
- Step 3: Heat the olive oil in a large skillet over medium-high heat and fry the eggplant slices until golden brown on both sides, about 3-4 minutes per side.
- Step 4: Transfer the fried eggplant slices to a baking sheet lined with parchment paper.
- Step 5: Spread a spoonful of tomato sauce on each eggplant slice, leaving a 1/2-inch border around the edges.
- Step 6: Top each eggplant slice with a slice of mozzarella cheese and a sprinkle of Parmesan cheese.
- Step 7: Bake the eggplant slices in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
