Description

Ingredients
- 1 cup Parmesan cheese
- 0.25 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup all-purpose flour

- 1 cup mozzarella cheese
- 2 cloves garlic
- 2 large eggplants
- 1 teaspoon salt
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Prepare the breading station by placing the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs mixed with Parmesan cheese in a third.
- Step 3: Season the eggplant slices with salt and pepper.
- Step 4: Dredge the eggplant slices in flour, then eggs, and finally breadcrumbs, pressing gently to adhere.
- Step 5: Heat about 1/2 inch (1 cm) of olive oil in a large skillet over medium-high heat. Fry the breaded eggplant slices until golden brown and crispy, about 3-4 minutes per side.
- Step 6: Transfer the fried eggplant slices to a baking dish and spoon some marinara sauce over each slice.
- Step 7: Top each eggplant slice with a slice of fresh mozzarella cheese.
- Step 8: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Step 9: Garnish with chopped fresh basil leaves and serve hot.
