Ingredients

  • 1 cup Parmesan cheese
  • 0.25 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup all-purpose flour

  • 1 cup mozzarella cheese
  • 2 cloves garlic
  • 2 large eggplants
  • 1 teaspoon salt

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Prepare the breading station by placing the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs mixed with Parmesan cheese in a third.
  3. Step 3: Season the eggplant slices with salt and pepper.
  4. Step 4: Dredge the eggplant slices in flour, then eggs, and finally breadcrumbs, pressing gently to adhere.
  5. Step 5: Heat about 1/2 inch (1 cm) of olive oil in a large skillet over medium-high heat. Fry the breaded eggplant slices until golden brown and crispy, about 3-4 minutes per side.
  6. Step 6: Transfer the fried eggplant slices to a baking dish and spoon some marinara sauce over each slice.
  7. Step 7: Top each eggplant slice with a slice of fresh mozzarella cheese.
