Ingredients

  • 0.25 cup mayonnaise
  • 2 tablespoons unsalted butter
  • 4 ears corn
  • Salt and pepper
  • 0.25 teaspoon smoked paprika
  • 0.25 cup Mexican crema
  • 0.25 teaspoon chili powder
  • 1 tablespoon lime juice
  • 0.5 teaspoon cumin
  • 0.5 cup cotija cheese
  • 0.25 cup cilantro

Instructions

  1. Step 1: Preheat grill to medium-high heat
  2. Step 2: Grill corn ears for 10-12 minutes, turning every 2-3 minutes, until lightly charred
  3. Step 3: Slather each ear of corn with 1 tablespoon of mayonnaise
  4. Step 4: Drizzle 1 tablespoon of crema over the mayonnaise
  5. Step 5: Sprinkle 1/8 cup of cotija cheese over the crema
  6. Step 6: Sprinkle cilantro, cumin, smoked paprika, and chili powder over the cheese
  7. Step 7: Squeeze 1/4 teaspoon of lime juice over the corn
