Description
Grilled Mexican Street Corn on the cob slathered with mayonnaise, cotija cheese, and chili powder
Ingredients
- 0.25 cup mayonnaise
- 2 tablespoons unsalted butter
- 4 ears corn
- Salt and pepper
- 0.25 teaspoon smoked paprika
- 0.25 cup Mexican crema
- 0.25 teaspoon chili powder
- 1 tablespoon lime juice
- 0.5 teaspoon cumin
- 0.5 cup cotija cheese
- 0.25 cup cilantro
Instructions
- Step 1: Preheat grill to medium-high heat
- Step 2: Grill corn ears for 10-12 minutes, turning every 2-3 minutes, until lightly charred
- Step 3: Slather each ear of corn with 1 tablespoon of mayonnaise
- Step 4: Drizzle 1 tablespoon of crema over the mayonnaise
- Step 5: Sprinkle 1/8 cup of cotija cheese over the crema
- Step 6: Sprinkle cilantro, cumin, smoked paprika, and chili powder over the cheese
- Step 7: Squeeze 1/4 teaspoon of lime juice over the corn
- Step 8: Season with salt and pepper to taste
- Step 9: Drizzle melted butter over the corn
