Description

A classic Mexican street food, grilled corn on the cob slathered with mayonnaise, cotija cheese, and chili powder

Ingredients

  • 2 cloves garlic
  • 4 ears corn
  • 1 tsp smoked paprika
  • 1 lime
  • 0.5 cup cotija cheese
  • 0.5 tsp chili powder
  • 1 tsp cumin
  • 0.5 cup Mexican crema
  • 2 tbsp unsalted butter
  • 0.25 cup mayonnaise
  • Salt and pepper

Instructions

  1. Step 1: Preheat grill to medium-high heat
  2. Step 2: In a small bowl, mix together mayonnaise, crema, cotija cheese, cumin, smoked paprika, chili powder, salt, and pepper
  3. Step 3: Brush the corn with softened butter and season with salt and pepper
  4. Step 4: Grill the corn for 10-12 minutes, turning every 2 minutes, until lightly charred
  5. Step 5: Slather the corn with the mayonnaise mixture and sprinkle with garlic
  6. Step 6: Serve immediately with lime wedges
