Description
A classic Mexican street food, grilled corn on the cob slathered with mayonnaise, cotija cheese, and chili powder
Ingredients
- 2 cloves garlic
- 4 ears corn
- 1 tsp smoked paprika
- 1 lime
- 0.5 cup cotija cheese
- 0.5 tsp chili powder
- 1 tsp cumin
- 0.5 cup Mexican crema
- 2 tbsp unsalted butter
- 0.25 cup mayonnaise
- Salt and pepper
Instructions
- Step 1: Preheat grill to medium-high heat
- Step 2: In a small bowl, mix together mayonnaise, crema, cotija cheese, cumin, smoked paprika, chili powder, salt, and pepper
- Step 3: Brush the corn with softened butter and season with salt and pepper
- Step 4: Grill the corn for 10-12 minutes, turning every 2 minutes, until lightly charred
- Step 5: Slather the corn with the mayonnaise mixture and sprinkle with garlic
- Step 6: Serve immediately with lime wedges
