Ingredients

  • 0.25 cup parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 large flour tortillas
  • 0.5 cup cucumber
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 cup chickpeas
  • 0.25 cup cilantro
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 1 cup lettuce
  • 1 cup Greek yogurt
  • 2 tablespoons all-purpose flour
  • 1 cup tomatoes
  • 2 tablespoons olive oil

Instructions

  1. Step 1: Preheat oven to 375°F (190°C)
  2. Step 2: In a food processor, combine chickpeas, garlic, parsley, cilantro, lemon juice, cumin, smoked paprika, salt, and pepper. Process until well combined
  3. Step 3: Transfer mixture to a bowl and stir in flour
  4. Step 4: Using wet hands, shape mixture into 8-10 patties
  5. Step 5: Place patties on a baking sheet lined with parchment paper, brush with olive oil, and bake for 20-25 minutes, flipping halfway

  7. Step 7: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
  8. Step 8: Assemble wraps by spreading tzatziki sauce on each tortilla, followed by a few falafel patties, shredded lettuce, diced tomatoes, and chopped parsley
