- 1 cup all-purpose flour
- 2 pounds potatoes
- 1 tablespoon chives
- 0.5 teaspoon Dijon mustard
- 0.25 teaspoon black pepper
- 1 cup mayonnaise
- 2 cups panko breadcrumbs
- 0.25 teaspoon cayenne pepper
- 500 g Cod Fillets
- 0.5 teaspoon paprika
- 1 tablespoon dill
- 0.5 teaspoon salt
- Salt and pepper
- 1 cup butter
- 1 tablespoon lemon juice
- Vegetable oil
- 2 large eggs
Instructions
- Step 1: Prepare the tartar sauce by mixing all the sauce ingredients in a bowl and refrigerating for at least 30 minutes.
- Step 2: In a shallow dish, mix together the flour, paprika, cayenne pepper, salt, and black pepper.
- Step 3: Pour the melted butter into a separate shallow dish.
- Step 4: Dip each piece of fish into the butter, then coat in the flour mixture, shaking off excess.
- Step 5: Dip the floured fish into the beaten eggs, making sure they are fully coated.
- Step 6: Roll the egg-coated fish in the panko breadcrumbs, pressing the crumbs onto the fish to help them stick.
- Step 7: Heat about 1/2-inch of vegetable oil in a large frying pan over medium-high heat.
- Step 8: Fry the coated fish pieces in batches until golden brown, about 3-4 minutes per side.
- Step 9: Remove the fish from the oil and place on a paper towel-lined plate to drain excess oil.
- Step 10: Increase the oil temperature to 375°F (190°C).
- Step 11: Fry the potato sticks in batches until golden brown, about 3-4 minutes per batch.
- Step 12: Remove the chips from the oil and place on a paper towel-lined plate to drain excess oil.
- Step 13: Serve the fish with the chips and a side of tartar sauce.
