Ingredients
- 1 bay leaf
- 0.5 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 4 rolls hoagie
- 1 teaspoon salt
- 4 slices Swiss cheese
- 3 pounds beef prime rib roast
- 1 tablespoon olive oil
- 2 cloves garlic
- 4 cups beef broth
Instructions
- Step 1: Preheat oven to 325°F (160°C).
- Step 2: Season the beef with thyme, rosemary, salt, and pepper.
- Step 3: In a large Dutch oven, heat the olive oil over medium-high heat. Sear the beef on all sides until browned, about 2-3 minutes per side.
- Step 4: Add the garlic, bay leaf, and beef broth to the pot. Cover and transfer to the preheated oven.
- Step 5: Roast the beef for 2 1/2 hours, or until tender and easily shredded with a fork.
- Step 6: Remove the pot from the oven and let the beef rest for 10 minutes before slicing thinly against the grain.
- Step 7: Split the hoagie rolls in half and toast until lightly browned.
- Step 8: Assemble the sandwiches by placing sliced beef onto the rolls, topping with Swiss cheese, and serving with a side of au jus for dipping.
