Description
Tender beef in a rich, flavorful broth served with crispy baguette slices.
Ingredients
- 1 bay leaf
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 teaspoons thyme
- 3 cloves garlic
- 1 cup red wine
- 1 tablespoon tomato paste
- 4 hoagie rolls
- 2 tablespoons vegetable oil
- 4 slices Swiss cheese
- 2 cups beef broth
- 4 tablespoons butter
- 1 large onion
- 3 pounds beef top round
- 1 teaspoon rosemary
Instructions
- Step 1: Preheat oven to 300°F.
- Step 2: Heat oil in a large Dutch oven over medium-high heat. Sear beef until browned, about 2-3 minutes. Transfer to a plate.
- Step 3: Reduce heat to medium. Cook onion until caramelized, about 20-25 minutes. Add garlic and cook 1 minute.
- Step 4: Add broth, wine, tomato paste, thyme, rosemary, and bay leaf. Stir to combine, scraping up browned bits.
- Step 5: Return beef to pot, cover, and transfer to preheated oven. Braise for 2 1/2 hours or until tender.
- Step 6: Remove pot from oven and season with salt and pepper. Strain broth through a fine-mesh sieve into a clean pot, discarding solids.
- Step 7: Simmer broth over medium heat until reduced by half, about 10-15 minutes.
- Step 8: Slice hoagie rolls in half and toast until lightly browned.
- Step 9: Assemble sandwiches by placing beef onto rolls, then spooning hot broth over top. Place Swiss cheese on top and dot with butter.
