Ingredients

  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 teaspoons thyme
  • 3 cloves garlic
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 4 hoagie rolls
  • 2 tablespoons vegetable oil
  • 4 slices Swiss cheese
  • 2 cups beef broth
  • 4 tablespoons butter
  • 1 large onion
  • 3 pounds beef top round
  • 1 teaspoon rosemary

Instructions

  1. Step 1: Preheat oven to 300°F.
  2. Step 2: Heat oil in a large Dutch oven over medium-high heat. Sear beef until browned, about 2-3 minutes. Transfer to a plate.
  3. Step 3: Reduce heat to medium. Cook onion until caramelized, about 20-25 minutes. Add garlic and cook 1 minute.
  4. Step 4: Add broth, wine, tomato paste, thyme, rosemary, and bay leaf. Stir to combine, scraping up browned bits.
  5. Step 5: Return beef to pot, cover, and transfer to preheated oven. Braise for 2 1/2 hours or until tender.
  6. Step 6: Remove pot from oven and season with salt and pepper. Strain broth through a fine-mesh sieve into a clean pot, discarding solids.
  7. Step 7: Simmer broth over medium heat until reduced by half, about 10-15 minutes.
  8. Step 8: Slice hoagie rolls in half and toast until lightly browned.
  9. Step 9: Assemble sandwiches by placing beef onto rolls, then spooning hot broth over top. Place Swiss cheese on top and dot with butter.
