Ingredients
- 4 rolls hoagie
- 2 tablespoons olive oil
- 8 slices Gruyère cheese
- 0.5 teaspoon black pepper
- 1 teaspoon thyme
- 2 cloves garlic
- 1 teaspoon salt
- 1 bay leaf
- 4 cups beef broth
- 1 teaspoon rosemary
- 1 3-pound beef prime rib roast
Instructions
- Step 1: Preheat oven to 325°F (160°C).
- Step 2: Season the beef roast with salt, pepper, thyme, rosemary, and garlic.
- Step 3: Heat the olive oil in a large Dutch oven over medium-high heat. Sear the beef roast until browned on all sides, about 2-3 minutes per side.
- Step 4: Transfer the pot to the preheated oven and roast for 2 1/2 hours, or until the beef reaches your desired level of doneness.
- Step 5: Remove the pot from the oven and let the beef rest for 10-15 minutes before slicing thinly against the grain.
- Step 6: Strain the juices from the pot into a saucepan, discarding the solids. Bring the juices to a simmer over medium heat and cook until reduced by half, stirring occasionally.
- Step 7: Split the hoagie rolls in half and toast until lightly browned.
- Step 8: Assemble the sandwiches by placing sliced beef onto the rolls, followed by a slice of Gruyère cheese.
- Step 9: Serve immediately with the warm au jus for dipping.
