Description

A classic French-inspired sandwich filled with tender beef, melted cheese, and served with a rich au jus for dipping

Ingredients

  • 4 rolls hoagie
  • 2 tablespoons olive oil
  • 8 slices Gruyère cheese
  • 0.5 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 bay leaf
  • 4 cups beef broth
  • 1 teaspoon rosemary
  • 1 3-pound beef prime rib roast

Instructions

  1. Step 1: Preheat oven to 325°F (160°C).
  2. Step 2: Season the beef roast with salt, pepper, thyme, rosemary, and garlic.
  3. Step 3: Heat the olive oil in a large Dutch oven over medium-high heat. Sear the beef roast until browned on all sides, about 2-3 minutes per side.
  4. Step 4: Transfer the pot to the preheated oven and roast for 2 1/2 hours, or until the beef reaches your desired level of doneness.
  5. Step 5: Remove the pot from the oven and let the beef rest for 10-15 minutes before slicing thinly against the grain.
  6. Step 6: Strain the juices from the pot into a saucepan, discarding the solids. Bring the juices to a simmer over medium heat and cook until reduced by half, stirring occasionally.
  7. Step 7: Split the hoagie rolls in half and toast until lightly browned.
  8. Step 8: Assemble the sandwiches by placing sliced beef onto the rolls, followed by a slice of Gruyère cheese.
  9. Step 9: Serve immediately with the warm au jus for dipping.
