Ingredients
- 4 cloves garlic
- 0.5 teaspoon black pepper
- 2 cups Gruyère cheese
- 2 tablespoons butter
- 6 cups beef broth
- 1 teaspoon salt
- 3 large onions
- 2 tablespoons olive oil
- 1 cup dry white wine
- 4 slices baguette
Instructions
- Step 1: Preheat oven to 375°F (190°C)
- Step 2: In a large saucepan, cook the sliced onions in butter over medium heat until caramelized, stirring occasionally (about 20-25 minutes)
- Step 3: Add salt, pepper, and garlic to the saucepan and cook for 1 minute
- Step 4: Add the white wine to the saucepan and cook until the liquid is almost completely reduced, stirring occasionally (about 5 minutes)
- Step 5: Add the beef broth to the saucepan and bring to a boil, then reduce the heat to low and simmer for 10-15 minutes
- Step 6: Preheat the broiler
- Step 7: To assemble the soup, place toasted baguette slices in the bottom of oven-proof bowls
- Step 8: Ladle the hot soup over the bread, then top with grated Gruyère cheese
- Step 9: Drizzle with olive oil and place under the broiler until the cheese is melted and bubbly (about 2-3 minutes)
