Description

Crispy fried bites filled with creamy macaroni and cheese

Ingredients

  • 1 cup mozzarella cheese
  • 1 cup buttermilk
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon paprika
  • 2 cups cheddar cheese
  • Vegetable oil
  • 0.5 cup all-purpose flour
  • 0.25 cup Parmesan cheese
  • 8 oz macaroni
  • 0.5 cup panko breadcrumbs
  • 2 large eggs

Instructions

  1. Step 1: Preheat oil in a deep frying pan to 350°F
  2. Step 2: Cook macaroni according to package directions, drain and set aside
  3. Step 3: In a saucepan, melt 2 tablespoons of butter over medium heat
  4. Step 4: Add flour and whisk together to make a roux, cooking for 1 minute
  5. Step 5: Slowly add 1 cup of milk, whisking constantly
  6. Step 6: Bring mixture to a simmer and cook until thickened, stirring occasionally
  7. Step 7: Remove from heat and stir in cheddar and mozzarella cheese until melted
  8. Step 8: Add cooked macaroni, paprika, garlic powder, salt, and pepper to cheese sauce, stir until combined
  9. Step 9: In a separate bowl, whisk together eggs and buttermilk
  10. Step 10: Add panko breadcrumbs and Parmesan cheese to egg mixture, stir until combined
  11. Step 11: Using a cookie scoop or spoon, drop mac and cheese mixture into breadcrumb mixture, coating completely
  12. Step 12: Carefully place coated mac and cheese balls into hot oil, frying for 3-4 minutes on each side, until golden brown
  13. Step 13: Remove from oil and place on paper towels to drain excess oil
